This is another recipe that is a family tradition at holidays. As with Lydia's Jiffy Toffee, the source is long since lost.
Melt together:
2 - 6 oz packages mint chocolate chips
1/2 stick margarine
Combine:
2 eggs, beaten
1 cup powdered sugar
1 cup chopped pecans
Add egg mixture very slowly to chocolate mixture. Cool.
Fold in 1 - 10-1/2 oz package colored miniature marshmallows.
Form into 4 rolls on waxed paper. Twist the ends of the waxed paper rolls. Keep refrigerated and slice as needed.
NOTE: If you can't find mint chocolate chips, add approximately 1 Tbsp mint flavoring to melted chocolate mixture before adding egg mixture.
